Opportunity:Product Development Chef

We are hiring on behalf of a company based in Markham for a Product Development Chef.

The successful candidate will provide high level expertise and creativity in the development and research for new and/or existing menu items, product categories and processes, to support the goals of the brand from a culinary and technical discipline.

Responsibilities :

  • Innovative culinary development of products for all channels of business in both Canada and the USA;
  • On-going review of current products to identify opportunities and gaps, in order to improve execution, profit and viability;
  • Function in the capacity of Project Leader for all product development projects, from ideation through introduction and full roll-out;
  • Coordinates all product tasting/testing with Senior Brand Team. Compiles, evaluates and analyzes test results to provide recommendations and next steps;
  • Recipe creation and documentation;
  • Work closely with Purchasing team on sourcing, testing and production of new menu items and new ingredients; liaise directly with vendors and suppliers;
  • Work closesly with the Quality Assurance team, to monitor quality of all food and beverages being delivered from our suppliers and act urgently to resolve quality issues if they arise;
  • Costing and maintenance for regional pricing, including US and Canada, and provide recommendations on retail pricing based on maket knowledge and costs;
  • Work closely with Training Team to bring new products and categories to market;
  • Competitve reviews and trend evaluation in order to create pipeline of product innovation;
  • Oversee and manage Product Development budget.

Required skills :

  • Passion for food, flavours, trends and recipe development;
  • Strong exposure to Asian culinary influences, especially Japenese (would be an asset);
  • Sushi experience / rice knowledge / seafood knowledge (would be an asset);
  • Must have thorough knowledge of food products, recipe and procedural writing, costing and manufacturing, plus an understanding of food service equipment knowledge;
  • Excellent communication and presentation skills;
  • Flexibility and 'out-of-the-box' mindset in order to bring alternative solutions to the table
  • Strong problem-solving skills and ability to work independently; requires independent, analytical and creative effort regarding proper procedures, planning of work and follow-up;
  • Basic Knowledge of food production and processing at the plant level; thorough knowledge of food safety standards, HAACP and Serve Safe Certification;
  • CFIA and FDA Product Labelling knowledge (would be an asset).
